Ginger Cookie Recipe

The ground has begun to freeze. The seed catalogs are arriving. Time to heat up the stove and make some cookies! Here is a healthy treat that you can bake with your children from Lesley Tierra’s, A Kid’s Herb Book.

Ginger is a wonderful warming herb that adds a nice spicy flavor while also aiding digestion. It’s great to add it to soups, teas, cakes and pies as well as cookies this time of year when the air is growing colder.

Ginger Cookie Recipe

1 stick of butter (1/2 cup)
3/4 cup of sucanat (or white sugar if you like)
2 eggs
2-1/4 cups whole wheat flour
1 tsp. baking soda
1-1/2 tsp. powdered ginger
1 tsp. cinnamon
1/4 tsp. ground cloves
1/2 tsp. salt
1 Tablespoon fresh, grated ginger

Preheat the oven to 350 degrees F. Blend the butter and sugar together until creamy. Beat in 2 eggs. Sift the flour and spices into the bowl with your other ingredients. Stir. Stir in the fresh grated ginger root. Chill the dough for 1/2 hour in the refrigerator. Roll out the dough (about 1/4 inch thick) and use cookie cutters or your hands to create ginger cookie shapes. Bake on buttered cookie sheet for 16 – 20 minutes.

Enjoy your healthy holiday treat, great to give as gifts!
